Tomato and feta salad with olive oil dressing

Ingredients
- 4 ripe tomatoes cut into slices
- small red onion, thinly sliced
- 200 g Feta cheese, crumbled
- 1/2 cup fresh basil leaves, chopped
- Salt and ground black pepper to taste
- 1/4 cup Orovalle oil
- 2 tablespoons red wine vinegar

Elaboration
In a large bowl, mix the tomatoes, red onion, feta cheese and basil.
Season to taste with salt and ground black pepper.
In another small bowl, combine the olive oil, red wine vinegar and Dijon mustard. Whisk with a fork until emulsified.
Pour the dressing mixture over the salad and mix well so that all the ingredients are coated.
Let the salad stand in the fridge for at least 30 minutes to allow the flavours to integrate.
Serve the salad cold and enjoy it as a side dish or as a main course.
